This coffee was grown by Luz Helena Salazar at the Maracay farm. This batch underwent a 48-hour anaerobic fermentation process. During this fermentation stage, fresh strawberries were added. Then the coffee was carefully washed and placed on raised beds, mixed with fresh strawberries, at a temperature below 35ºC until reaching the ideal moisture content. This micro-lot is 100% Castillo variety, developed by the National Federation of Coffee Growers. It is more productive than Caturra and resistant to coffee leaf rust.
