This coffee was grown by Jairo Arcila on a Santa Monica farm. The coffee is harvested according to strict maturity criteria, flotated and sorted by hand to remove any defects. The flotsam was then fermented for 30 hours under water, the pulp removed, the parchment gently rinsed and then dried under temperature-controlled conditions until the ideal moisture content is achieved.
This microlot - is 100% Pink Bourbon. This variety is currently being studied to determine its origin. It is said to be a mutation that occurred at 2,100 meters above sea level in San Adolfo, Vila.
