About Jairo Arcila & Cofinet For 80 years, the family-owned Arcila company has been developing and distributing Colombia's finest coffee to local exporters.
In 2015, the company expanded its operations to include the production, sourcing and export of specialty coffee to the rest of the world.
 As producers, they specialize in alternative fermentation processes that are new to Colombia, achieving unique profiles unknown to Colombian coffee.
Cofinet also represents and supports many Colombian specialty coffee producers. Their goal is to encourage a direct connection between farmers and roasters around the world. They pride themselves on creating sustainable, ethical and long-term relationships.
Finca Santa Monica is located at an altitude of 1,500 meters in the Kindio coffee region of Armenia. The soil - is volcanic ash, the temperature ranges from 18 to 28 degrees and the annual rainfall is 1800-2000 mm. Castillo and other Colombian coffees are grown here, as well as exotic, rare coffees such as Pink Bourbon and Papayo.



The peach aroma is intoxicatingly sweet and strong. This coffee was roasted to maximally reveal its flavor and provide the perfect balance between sweetness and acidity.

Fermentation process with peaches: 

The coffee underwent a 72-hour dry anaerobic fermentation process with peaches.
Peach pulp was added at this stage of fermentation. The coffee berries were then crushed and left to dry on African beds until they reached the perfect moisture content.

The peach aroma is bright and intoxicatingly sweet. The coffee was roasted to maximize the aroma combined with the perfect balance of sweetness and acidity.
