To answer this question, you need to try the novelty that YoCo developed together with Kolonist.
Washed Kenya with aging in a barrel from the red port wine "Bashta" was taken as raw material.
Thanks to the Kolonist winery, we got a unique barrel, 1 of the 6 barrels that are in Ukraine and are used to age port wine.
When choosing coffee for this cask, we couldn't afford to take something banal or simple, so we chose Kenya customs, which tastes like red wine and berries – just the perfect base.
The aging process was fast enough, but the result turned out to be defiant, during the 10 days that the coffee spent in the barrel, it turned into a perfect taste symbiosis of coffee and wine, acquiring the taste notes of wild fermentation that connected with the pure berry base of coffee, we got:
Aroma: Port wine, extra dark chocolate, cranberry, roasted almonds
Taste: Red currant, red wine, dark chocolate, fermented cranberry, light shades of elderberry, cake, cognac spirits, passion fruit, delicate tartness of blackcurrant stone in the aftertaste.
Moderate acidity, the level of bitterness is below average, the sweetness is high.
